The grapes are hand harvested, destemmed, and fermented spontaneously in stainless steel and acacia, with about a week of maceration on skins. Aging in both steel and acacia adds texture while keeping the wine lifted and savory. Bottled unfiltered, it shows a balance of gentle tannin, bright fruit, and earthy depth.
