Winemaker’s note: “The two types of Tsolikouri are very different

From seventy year old vines of Pinot Noir in the lauded premier cru of ‘Les Roncerets’

and then in 2006 he converted his vineyards to biodynamic winegrowing

The wine is aged ~24 months in used oak barriques and large foudres (no new oak)

2024 Domaine Alice et Olivier de Moor Chablis 'L'Humeur du Temps' Burgundy, France Averna Winemaker’s note: “The two typesL' Humeur du Temps roughly translates to "The Mood of the Times" but is a double entrendre that also could mean "The Mood of the Weather". The idea with this cuve is to capture a global snapshot of the vintage versus the nuance of a single vineyard bottling. In such, the wine comes from four parcels that are vinified separately then blended: Cte de l' Etang, Les Envers de Cte Chtif, Les Goulots de Jouan. Other fun fact: Olivier drew the label himself!
