This is part of their low intervention range. Spontaneous fermentation in open wooden vats, with the skins for the first 12 days. Takes another 2 months for the ferment to finish. Then 4 months on fine lees. Mid, cloudy orange gold. Complex salty sour apricot nose. Bitter orange. Dry, gently tannic, lots of flavour but not obviously Roditis.
